Simple Weeknight Meals: Baked Curry Chicken Bites


A good friend of mine says she loves my blog, but wants more simple recipes for a quick weeknight meal. A recipe that requires minimal prep, a small ingredient list, and doesn't make you nervous you're gonna fudge it up. Being that my new kitchen is mini (like, really mini), I'll have to make do with a bit more simplicity. Recipes included.

So, here it is. The beginning of a mini-series of simple weeknight meals for moms, single folks, and people who just want simple meals on a weeknight. Speaking of simple weeknight meals, remember this delicious weeknight pork ragu from a while back? It's so good. Here's another.

Baked Curry Chicken Bites
serves 4

2 lbs boneless, skinless chicken breast (cubed)
2 cups breadcrumbs
2 tbsp curry powder
1 tbsp ground cumin
1 tsp ground cayenne pepper (optional for heat)
1 tsp ground coriander
1 tbsp kosher salt
1 tsp pepper
3 tbsp olive oil

for the dipping sauce:
1/2 cup mayo
1/2 cup Greek yogurt or sour cream
1/2 lemon (juice)
1 tsp coriander
1 tsp salt

This is the easiest chicken nugget recipe in history. Here it goes.

Preheat oven to 425 degrees.

In a large freezer bag, add breadcrumbs, curry powder, cumin, cayenne, coriander, salt and pepper. Seal and shake to combine everything.

On a clean cutting board, cut chicken breasts into bit size cubes as evenly as possible. Drizzle with olive oil and a dash of salt and pepper. Rub it in.

Drop all the chicken pieces into the bag. Seal and shake. Shake around until all the chicken is coated. Get the chicken out of the bag with a slotted spoon to remove excess breadcrumbs.

Place chicken bites onto a foil lined baking sheet. If you have wire racks, add these to the baking sheet as well. It helps crisp up the chicken. Pop into the oven for 15-20 minutes, until golden brown.

As chicken bakes, stir together mayo, yogurt, lemon juice, coriander and salt. Place in a dipping bowl for dunking chicken bits into!
