Grilled Cheese Please
I do believe there are endless, delicious combinations of bread, cheese and fill-in-the-blank. And since I've been on a carb frenzy the past few weeks (thanks to the holidays), I might as well post this grilled cheese masterpiece before I pretend to cut back on carbs for my New Year's resolution...
Caramelized Onion, Pickle and Cheddar Grilled Cheese Sandwich
makes 2 sandwiches
4 slices thick multi-grain bread
1 cup grated sharp white cheddar
1 cup grated yellow cheddar
1 large yellow onion (sliced thin)
10 bread and butter pickles chips (rough chop)
2 tbsp whole grain Dijon mustard
2 tbsp soft unsalted butter
Start by caramelizing the onions. Heat a saute pan oven medium heat, and add olive oil. Add thinly sliced onions, and a dash of salt and pepper. Stirring occasionally, let the onions cook for about 30 minutes, until the are a dark color, but not burnt. They wilt down to almost nothing, so don't be scared of using a whole onion for 2 sandwiches.
The rest is easy. Assemble the sandwich. Slather one piece of bread with the mustard on one side, and load on yellow cheddar, then the onions and pickles, then the white cheddar on top. Cover with the other buttered piece of bread.
I use a griddle to cook my grilled cheese so there's plenty of room. Heat griddle to medium high, but make sure its not so hot that it will burn the bread. Cook on both sides until the butter is browned and the cheese is melty.
