Leek and Asparagus Spring Risotto
This recipe is very similar to my last risotto recipe, but I wanted to post this because I used some springy leeks to brighten it up!
Here's what I did a little different that you could try, following the steps in the previous recipe:
1. Add the leeks to the asparagus and give a good splash of white wine and lemon juice and zest.
2. When you add the Arborio rice to the garlic and shallots, add another splash of white wine and some more lemon zest.
