Green Kabobs
I'm getting all my summer picnic cooking in before we leave for vacation on Saturday. We're headed to Miami for 5 days for the Memorial Day weekend holiday, then driving down to Key West for my friend's wedding. Just gotta get through 2 more days of work. That means no grilling out, but I suppose laying on the beach will make up for it.
This recipe for green kabobs is super simple and tasty. I'm using that green cilantro sauce I made a few weeks back. Make this for your Memorial Day picnics this coming weekend!
Green Kabobs
makes 6 kabobs
2 boneless, skinless chicken breasts
4 green onions
1/2 cup chimichurri sauce
Get out that jar of chimichurri sauce. If you didn't make it, now's the time. Put all the ingredients into a blender or food processor and it's done.
Pour 1/2 cup of the chimichurri into a freezer bag. Cut the chicken breasts into cubes and drop into the bag. Refrigerate for 30 - 60 minutes.
If using a grill, soak the skewers for 30 minutes. If using a grill pan, no need to soak. Crank the grill or grill pan up to medium high heat.
Cut the green onion into 1 inch pieces, only using the light green part. Discard the dark green parts.
Stack the chicken and green onions onto the skewers. Drizzle a bit of olive oil onto the grill pan and drop the skewers onto the grill. Let each side cook for about 3 minutes, 12-15 minutes total.
