Buffalo Broccoliflower Dippers


We are undoubtedly outnumbered in San Francisco by non- college football fans. It sucks because I live and breath for a Gamecock win every Saturday in the fall. Brian roots for another team that went undefeated had a pretty good run until last week. We're both good sports and cheer for each other, though. But if the Cocks ever get a chance to play the Buckeyes, the house might come down. Not this year. Instead OSU plays Carolina's rivals, Clemson, in their bowl game. I guess I'll root for OSU.

Anyways, with few friends to watch games with, we've been watching the end of the season at home. My sister made some buffalo cauliflower "wings" a few weeks ago and I've been wanting to whip up some. They were the perfect (healthy) snack to accompany beers and watch the games. Go Gamecocks!

Most of these types of recipes call for cauliflower. I used broccoliflower to change it up a bit. If you can't find it at the grocery store, cauliflower works just fine!

Buffalo Broccoliflower Dippers
makes 1 tray

1 head broccoliflower (or cauliflower)
1 cup all purpose flower
1 cup water
1 tsp garlic powder
1 tsp green or red chili powder
1 tsp kosher salt
3/4 + 3 tbsp cup hot sauce (I used Trader Joe's Chili Pepper Sauce)
2 tbsp + 1 tbsp unsalted butter (melted)
Creamy Feta Dill Dip (recipe below)

Preheat oven to 450 degrees. Cut up broccoliflower or cauliflower into florets so they are bite sized.

Mix flour, garlic powder, chili powder and salt together. Add water and make a thin batter.

Line a baking sheet with foil. Working in about 3 batches, drop florets into batter. Turn over a few times to coat each piece. Remove pieces with a slotted spoon to let the excess batter drip back into the bowl. Place coated pieces on baking sheet. Repeat until all pieces are coated in batter.

Pop into the oven for 20 minutes.

While dippers are in the oven, make the buffalo sauce. Combine 2 tbsp melted butter with 3/4 cup hot sauce and stir to combine. Save the rest of the butter and hot sauce for dipping later. Also make the dipping sauce as the dippers bake. Recipe below.

Take dippers out of the oven. Coat with buffalo sauce all over each dipper. You might need to shuffle them around the baking sheet a little to make sure all sides are coated.

Return to oven for another 8 minutes. Remove and serve immediately with creamy feta dill dip and extra buffalo dip.

Creamy Feta Dill Dip

3/4 cup Greek yogurt
1/4 cup mayonnaise
1/2 cup Feta crumbles
1 tsp dried dill
1/2 tsp celery salt
1/2 tsp green or red chili powder

Mix all ingredients together in a mixing bowl. Transfer to a serving bowl for dipping.
