Grilled Brussels Sprouts
It's been a while since I've shared a Brussels sprout recipe. This one is easy and a little different. Grilling the whole sprout without cutting it in half lends to a more cabbagey flavor than when cut. Get out there and use your grills before it snows! Although, I guess that's not something I have to worry about anymore! Hello California!
1 lb. Brussels sprouts
2 tbsp honey
2 tbsp apple cider vinegar
1 tsp red pepper flakes
olive oil
salt and pepper
3-4 soaked wood skewers
To ensure the Brussels sprout gets cooked all the way through, they first need to be steamed. Fill a pot with water only 1 inch deep. Turn up the heat so the water is simmering. Add a good amout of salt. Remove any dirty skin from the sprouts, and trim the bottom just a bit. Throw the sprouts into the simmering water and cover. Let steam for 5 minutes. Remove and drain.
Carefully pop the sprouts onto the pre-soaked skewers. Add as many as will fit. Place on a plate or in a baking dish. Coat with honey, vinegar, red pepper flakes, salt and pepper. Let soak for 15 minutes.
Crank up the grill and drop on the skewers. Let each side cook for about 3 minutes, or about 10 minutes total. Et voila! Crispy and delicious Brussels sprouts.
